I’m a true believer in eating real, naturally occurring, whole foods and that certainly includes eating the whole egg! In fact – the yolk is where all the good stuff is:
– Vitamin D: key factor in maintaining strong immunity and building strong bones. It also improves your mood and combats cancer!
– Choline: important for synthesis of the neurotransmitter acetylcholine, cell-membrane signaling, lipid transport, and methylgroup metabolism… Yep – these are very big words meaning very important things!
– Fat, including Omega 3 fatty acids : helps cleanse and lubricate our internal systems. Great for brain function.
– Antioxidants: a single raw egg contains at least twice as many antioxidant properties as an apple. Who knew?
They’re also rich in vitamin A, B, C, E and K, iron, zinc and lecithin as well as all the nine essential amino acids – making it a great source of complete protein.
And yes – there is naturally occurring cholesterol in eggs, but recent studies have found that eating cholesterol containing foods does not increase your own bad cholesterol (LDL.) So you can feel good about eating eggs without worrying about your cholesterol!
I certainly can not make a plug for eating eggs without adding a few words about choosing good eggs…
You want to buy eggs from pastured hens! These hens have been free to walk around in their natural environment – eating forage and bugs (not corn!) outside in the sunshine! That means their eggs will have a higher level of both Omega 3 and vitamin D. If you live near a farm or farmers market – go get your eggs there!
